1. It's not just for the rich anymore!
The demand for fresh, high-quality seafood is growing at an alarming rate. According to a recent study by the Pew Research Center, Americans are eating more fish than ever before. And that trend will only continue as we become increasingly aware of our health and environmental impact on this resource.
2. The best way to cook it is in a cast iron skillet!
Cast iron skillets have been used since the early 1900s. They're non-stick, easy to clean and they keep food from sticking. For those of you who don't know, cast iron pans are very durable and last a lifetime with proper care (or more!) They can be used to cook just about anything and are especially good for searing in juices.
3. It's not just for stews anymore!
Cast iron is great for stews because all the ingredients cook evenly and don't steam or burn before the other ingredients are done. But cooks don't just use cast iron to make stews anymore! Some of the most inventive dishes have come from chefs and home cooks using cast iron skillets. Here are some of our favorites...

4. It's not just for the rich or "citizen cooks!"
Cast Iron is pretty expensive, but if eaten on occasion it should last a lifetime! Luckily, there are many affordable good cast iron pans out there. They aren't as nice as the ones that cost thousands of dollars, but they get the job done and save money in the long run.
5. It's available virtually everywhere!
You can find cast iron pans at most kitchen supply stores, but they're becoming more and more available at grocery store chains like CostCo and Sam's, and some independent stores. You can also order them online.
6. It's good for you!
Many experts recommend cooking with healthy fats, like those found in the rendered fat from steak or chicken (or pork! or duck!) when possible. Seafood and some vegetables contain healthy oils too, so they're good to cook with too!

8. ...And giving them the leftovers for lunch!
You can cook this with pretty much any meat. Here we're using pancetta, but you could use regular bacon or even prosciutto if you want. Just cook until the pancetta is done and the asparagus is tender.
9. It's an excellent way to use up leftovers! With a few simple ingredients, you can create something delicious and impressive.
The day after we made this, we had some roasted chicken and some fresh asparagus. Here's what we did...
Pancetta-Wrapped Asparagus
Wrap some pancetta or prosciutto around as much as you can of the asparagus.
10. Get out there and start cooking!
Have fun in the kitchen and experiment with different meats, vegetables, spices, etc. If you're really adventurous try regional cooking methods, like smoking or braising!
