One of the main reasons why we all love these little desserts is because they are so darn easy to make! All you have to do is put the egg yolks, sugar, and heavy cream into a bowl and whisk it all together. To this mixture, you can then add in the water, corn syrup, and salt. I like to use heavy whipping cream in this recipe because it makes the frosting on top of the pop tarts taste creamier, but you can use milk if you prefer. Typically, you would use these ingredients to make a basic lemon pudding, but since we are going to be turning it into a pop tart, we need to change up the proportions a bit.

Pour this mixture into your pop tarts cups and place it in the oven for about 12-15 minutes at 350 degrees. The pop tarts should be a light golden color when they are done. To make sure they are completely baked, I like to test one after about 10 minutes by gently tapping on it. If it is very soft and gives a bit, they are ready. If they are very firm and not give at all, they need more time in the oven.

Remember to let them cool for at least five minutes before you take them out of the tin. Enjoy your delicious and easy to make pop tarts!

You can freeze these pop tarts after they are done baking. I like to stack them between parchment paper and then place them into a plastic wrap bag. They will last up to three months this way. Thaw them at room temperature for about three hours or microwave for about one minute.

Frosted Strawberry Pop Tart Variations:

Cinnamon Sugar Pop Tart: To make a cinnamon sugar pop tart, mix 1/4 cup of granulated sugar and 1/4 tsp each of cinnamon and nutmeg. Add the sugar to a pastry brush, and then using a circular motion, brush the tops of plain strawberry pop tarts with this mixture before serving.

Cream Cheese Frosting: In a small bowl, mix together 1/2 cup of softened cream cheese with 1 Tbsp of milk. Spread the mixture over the tops of the plain strawberry pop tarts before serving.

Coconut Frosting: In a small saucepan, melt together 1 oz of margarine and 1 oz of sweetened condensed milk over low heat. Whisk until smooth and sugar has dissolved. Do not boil. Let cool. To finish, brush the frosting over the top of the plain strawberry pop tarts before serving.

YOU CAN ALSO MAKE THIS IN THE oven! Preheat oven to 350 F. Grease a 12-cup muffin pan and set aside. Prepare pop tarts as directed, except do not add the frosting. Instead, place the pop tarts into the prepared muffin pan. Bake for 12-15 minutes or until golden brown and let cool in pan for 5 minutes before removing to a wire rack to finish cooling completely.
